TASTING NOTES
Bright and focused, showing crunchy green apple with layers of lime and lemon zest. A fine talc-like texture and subtle bath salt character add complexity, while linear acidity and balanced minerality drive a long, refreshing finish. This wine pairs well with oysters and any shell fish.

WINEMAKING NOTES
Very early press cut 100% free run grape juice, cold fermented in tank with EC1118 yeast fermented for 3 weeks at 11°C

VINTAGE
Great Southern region experienced near-perfect vintage conditions, with warm days and cool nights contributing to even ripening. This allowed for optimal flavour development and enhanced the intensity, balance, and character.
